Honey never spoils due to its natural acidity and low moisture content, making it inhospitable to bacteria
Honey is the bees food. In winter, the bees occupy their time clustering around the queen and shivering to keep the hive warm. Honey makes the perfect high energy food to keep them going until spring.
The honey in each hive changes with the seasons, depending on what flowers are available. Honey can be woodsy, spicy or delicate in flavor. Eucalyptus flowers can even give a menthol flavor. The color changes depending on the nectar source.
As well as honey, bees also provide Royal Jelly, beeswax, honeycomb and pollen.
Each hive can produce between 14 - 40 kg of honey per year
Bees are needed to pollinate the crops to feed us - no bees and we will struggle to grow approximately 1/3 of our food.
Honey has been used for thousands of years for medical treatments. It has been used for cuts, burns and infections due to its natural resistance to bacteria. It has also been used for many ailments in teas and capsules.
It is thought eating local honey regularly may help seasonal allergies as the nectar the bees use to make the honey is from the flowers causing the allergies.
