HONEY muffins

2 cups plain flour

1/2 cup sugar

1/2 teaspoon salt

3 teaspoons baking powder

1 large egg at room temperature

250ml milk

60g  melted butter

1/4 cup honey


Preheat oven to 200 degrees

Combine the dry ingredients in a large bowl.

 Combine honey, butter, egg and milk in a small bowl, then add to the dry ingredients, mixing gently.

Place mix into a paper lined muffin tray, filling to 3/4 full

Bake for 15-18 minutes

Let cool for 5 mins before turning out.

May be served with cream for a delicious morning or afternoon tea.


You can have fun changing this up by adding 1/3 cup of pecans or some lemon rind and a squeeze of lemon juice.

 Freeze the muffins if you wish - thaw at room temperature or in microwave on high for 20-30 seconds
